Buddhism and Thukpa – Keep it Simple

The fundamental precept of Buddhism is Interdependence or the Law of Cause and Effect. This simply states that everything which an individual being experiences is derived through action and experience. From this understanding are derived the Buddhist theories of consciousness and rebirth”. That’s how the 14th Dalai Lama, Tenzin Gyatso explains Buddhism in his autobiographical book “Freedom in Exile”. If I were to simply decipher those lines written above, it’d be – whatever you do, its consequences will follow you. If you do good, then you’ll meet good and if you do something bad, then of course you know what. It’s Karma. Since this blog is about food – well I should say since I am a foodie – we’ll diverge slowly towards food.

Thukpa Recipe

Thukpa Recipe

The way he described Tibet and its beauty is exceptional. Though I have never been to Tibet but I can somehow get a feel of that place – Mountains, snow, people still living that simple life contrary to their neighbor. Though Tibet has changed, thanks to China. I won’t get into political things. Tibet’s temperature – which is quite cold – gives it a unique cuisine. It’s mainly meat and butter – you need calories, a lot of calories and heat. Being Dalai Lama is about being simple, keeping simple and at times eating simple and healthy recipes. As a kid, the 14th Dalai Lama loved the visits from her mother to the Potala Palace. This is a palace where he was kept separated from his family to become a spiritual leader in the future. Apart from motherly love, there is one more reason he loved such visits – Thukpa. Best part is that you can add in veggies of your choice. Let’s make this Tibetan noodle soup and try to make it good else Karma will haunt us!

Ingredients:

For Thukpa:-

Salt as required,

Pepper as required,

Coriander as required,

300 gms Rice Noodles,

  4. Add carrot and capsicum to stock. Simmer for 3 minutes until vegetables are a bit tender. Add lemon juice and season to taste.

  5. Divide the noodles in bowls. Top with chicken. Ladle stock and vegetables over the noodles. Serve!

Food for A Soldier on Memorial Day

John F. Kennedy says, “my fellow Americans, ask not what your country can do for you, ask what you can do for your country”. This reminds us of nothing but Memorial day. I was watching this movie Saving Private Ryan and like always, cried. Whenever I watch war movies – though I don’t watch frequently – I feel angry as well as sad. Angry because we lose young soldiers to a war which has no end. Sad because we just lose them forever. Not only here in America, I guess this is the story of most of the countries where soldiers sacrifice their life. However, their death never goes in vain. We feel proud of our soldiers who die for their country so that we can live on to sing songs for them.

Beef and Pasta Salad

Beef and Pasta Salad

We actually do that by celebrating Memorial Day every year on the last Monday of May. This day has become a part of America’s culture with its long history. It is an emotional day as we remember those soldiers who came back home, with the national flag over their coffins. But we humans are so good at getting adapted to situations that we remember them with smiling faces. We adapt, we accept and we survive. This is good, isn’t it? Soldiers leave home for months and sometimes years. They are away from home, family and that “homely” food – I hate stuffing my food love everywhere. Let’s try this simple and healthy recipe for not so simple soldiers.

Steak and Pasta Salad

Ingredients:-

8 ounces Pasta,

1 teaspoon Basil,

2 tablespoon Butter,

1 pound Beef Steak,

2 tablespoons Olive Oil,

1 cup chopped Spinach,

1 tablespoon Soy Sauce,

1/4 cup chopped Shallots,

1 teaspoon minced Garlic,

1/2 cup sliced Black Olives,

1/2 cup Sun-dried Tomatoes,

1 tablespoon chopped Parsley,

1/2 cup crumbled Feta Cheese,

3 tablespoons Sunflower Kernels.

Preparation Method:-

1. Take a pot. Add in water and bring the water to boil. Add pasta and cook till done. When cooked, drain. Then toss with olive oil and keep warm. In the mean time, melt 1 tablespoon of butter in a skillet over medium heat.

2. Broil the rib-eye from both sides. Make sure it is cooked well depending on the thickness of the meat. Remove steak from skillet. Cut into bite size pieces. Melt remaining butter in the skillet. Stir in garlic and shallots.

3. Cook for 12 seconds until fragrant. Then return the steak to the pan. Cook for another 5 minutes till done. Stir in the soy sauce. Cook till steaks are well coated with sauce.

4. Remove the skillet from heat. Stir in the sun-dried tomato pesto, spinach, basil, parsley, olives, feta cheese and kernels. Toss with the pasta. Serve in large family bowl.

Healthy Recipes for Kids Birthday Party

Angela is my neighbor and we spend a lot of quality time together, especially on weekends. Yesterday was her son’s birthday party. Kids await for their birthday party throughout the year. The joy on their face for this special day, makes us forget all the pain and stress in life. Tom turned 11 this year and just as all the birthdays, Angela wanted to make it special for him and so I. Since on weekdays we hardly have anytime, we have to go for quick and easy recipes keeping health into consideration as we all love our children.

Yummy Burrito!

Yummy Burrito!

Burrito – Kids love to pick this Mexican and Tex-Mex food. Whole wheat rolls with tempting filling such as diced grilled chicken, tomatoes, grated carrots and greens make an excellent healthy snack loved by people of all age groups. You can also stir-fry these veggies. Serve it with your favorite sauce. I usually pair burrito with my fav dip recipe, Vegan Walnut and Red Pepper Dip. You must give it a try as well.

Ice Cream Salad

Ice Cream Salad

Fruit Salad with Ice cream – Fruit salad with Ice cream is a good way to make your kids eat seasonal fruits. The recipe is quite flexible. Add in diced fruits (seasonal fruits) like watermelon, mango, grapes, bananas, cantaloupe etc. Take scoops of ice-cream and top on the salad. I usually use strawberry and butterscotch flavor. Serve in ice-cream bowls as shown. The bowls will be empty in no time. Kids will go bonkers over it!

Baked Meatball Curry!

Baked Meatball Curry!

Sweet and sour Meatballs – Ah! Here it comes. I love meat recipes. Do not make this recipe too spicy. You can prepare the meatballs in advance. Prefer baking the balls rather than deep frying them. Also you can fry the paste a day before birthday party. I prefer Italian style of preparing the sauce for meatballs. It consists of onions, carrot, celery, parsley, garlic, tomatoes, basil, black pepper. Enjoy the yummzz!

Vanilla Strawberry Cake!

Vanilla Strawberry Cake!

Strawberry Cake – The classic combination of plain vanilla cake, fresh strawberry and smooth cream never fails. I love bakery products, especially when they are homemade. The aroma of the bake is simply irresistible. Nevertheless, cake can be prepared a day before the birthday to save time, it all depends on our resisting power that we don’t eat it the moment it is cool. Kids love it.

Vegetable Rice Noodles!

Vegetable Rice Noodles!

Vegetable Rice Noodles – Rice noodles is a good way to treat yourself instead of the refined flour noodles. It’s an excellent meal for birthday party. It is gluten-free recipe as well. Mix in the seasonal veggies with bit of Vinegar, soya sauce, sweet chili sauce (kids will avoid chili sauce) and tomato sauce. The bowl of noodles will be over in no time for sure.

Cheers!

Happy Birthday!

Know What you Eat with Ingredients Handbook

Go for meditation and try your hands at healthy food” said my niece when I told her about my stressful routine. I guess everybody has this routine which is an add on to the already full plate of issues.

Ingredients Handbook Homepage

Ingredients Handbook Homepage

Taking her advice, I started with it. She showed me an app named Ingredients Handbook (Available on both Appstore and Playstore). I suggest you guys must check it out. It is all about ingredients and their values. I realized that cooking is a way to channelize my energy. Looking at the hot steam of rice is more meditating to me than a proper meditation. It is the perfect way to use that extra energy in cooking rather than acting weird with your family. Cooking doesn’t mean that you have to use all the spices and cook something great, it’s about knowing the value of each ingredient you use. Simple dishes are a therapy for you.  You should go for something healthy like herbs, oil and roots, which are plenty in this app.  I’ll let you all know the ones I have used.

Broadly Categorized Ingredients

Broadly Categorized Ingredients

The ingredients in the app have been effectively categorized for the ease of the user. Lemon balm is one such herb which I use regularly. Chop the leaves and add them to the salad. These leaves help in reducing the stress level. Then comes Basil which is a sacred plant in India. Pasta seasoning with basil will give it a strong and a different flavor. Rich in antioxidants, basil prevents a lot of diseases. What if your someone helps you boost your blood pressure? Well, parsley can be of help. Rich in a lot of vitamins parsley can be used in tea or green sauce with nachos.

Nutritional Values in a Sorted Manner

Nutritional Values in a Sorted Manner

In addition to this, Nutrient Chart checks the nutritional values of all Ingredients. Sitting on the chair at work place for long hours can result in digestion issues like heartburn or upset stomach which will result in irritation. So don’t pour out your irritation on others and go for peppermint based mocktails. Getting up early, leaving for work and then driving back home – when do you work out? Actually you don’t, even I don’t get time on weekdays. Muscle pain is inevitable under such circumstances. Rosemary can relieve you with that. You can either add it to marinated chicken or olive oil.

Description, Excess and Deficiency Hazards for Each Ingredient

Description, Excess and Deficiency Hazards for Each Ingredient

This is not all, check the benefits, excessive hazards, deficiency hazards and much more relating to 1000 such ingredients. Traveling comes with pollution. Pollution enhances acne. Thyme oil can help you reduce this. You can stuff your turkey with thyme leaves and enjoy health. Losing appetite is one of the reasons why people take stress. Have something, that might calm you down. Fennel seed soup can help you in getting hold of your appetite. Must have seen “Olaf” (the snowman type character in the movie “Frozen”) playing with dandelion seeds while dreaming of summers. You wouldn’t have imagined how useful those dandelions could be. Go for sauteed dandelion greens which will result in a cleansed system and improved digestion. Beat the boredom and explore your knowledge with QUIZ.

Turkey & Mushroom Burger

I love the recipes that are tasty as well as healthy. Low-sodium cheese will help you in finding among healthier cheese and that is what I opt for. Turkey breast is a good choice for a healthy diet. Keep Calm and Eat

Life seems to have shaken hands with stress. Getting up in the morning, going to the gym or walk, preparing meal, packing the lunch box, having breakfast, traffic, work pressure, coming back, again cooking, OMG! We always wish for a meal that is quick, tasty, healthy and something that removes stress. All we need to do is smart shopping that helps in quick cooking.

Muesli with Milk – It is often said, milk is complete food. I completely agree with this. It keeps you energetic throughout the day.

Muesli Milk with Fruits

Muesli Milk with Fruits

Method 1: Boil 1/2 cup of muesli and milk. Let it cool for 5 minutes. Top with seasonal fruits!

Muesli with Plain Milk

Muesli with Plain Milk

Method 2: This quick and easy recipe needs hardly anytime to prepare. Mix muesli, Greek yogurt, milk and honey (desired sweetness). Place it in a bowl and cover with plastic wrap. Chill overnight. Sprinkle chia seeds in the morning. Enjoy 🙂

Healthy Smoothie: Avocado, coconut milk, apple juice and berries make a great smoothie. Though there are variety of healthy smoothies, and you can opt for anyone, this is my favorite one. ❤ ❤

Raspberry and Avocado Smoothie

Raspberry and Avocado Smoothie

Spicy Chicken and Vegetable Soup: Spices like ground nutmeg, garlic and curry powder add a kick to the hearty stew/soup. Such spices make digestion strong and also heal the guts. The nutrients get easily absorbed and surprisingly satisfy the sugar craving as well. Adding veggies like carrots, leek, cabbage are always welcomed. With addition of skinless and boneless chicken, the taste is doubled, trust me. Sometimes I even prefer having this light recipe with boiled rice, starch removed, during the lunch. We can relish the yummzz at dinner as well with multigrain bread or gluten-free as per choice.

Spicy Chicken and Vegetable Soup

Spicy Chicken and Vegetable Soup

Greens with Cashew and Ginger Stir-fry: Green leafy vegetables are loaded with vitamins and minerals. They are known as disease-fighting phytochemicals. They are rich in fibre and reduce weight. And trust me if cooked well, they are very tasty. The technique of preparing yummy green leafy vegetable is the amount of water you use in it. Unless we are preparing curry, broth or soup, use minimum water. Addition of ingredients such as ginger and cashews, give it a gingerly plus nutty taste. Ginger cure various stomach problems. It relieves us from arthritis, menstrual pain, respiratory infections and bronchitis. Ginger tea is widely recommended if one is suffering from cold, cough and flu. Cashew prevents cancer and keeps the heart healthy. It is very good for hair and skin. It keeps the bones strong. A delish stir-fry of broccoli, carrots, pak choi, kale with the garlic ginger blend and soya sauce sooths the taste buds. Cashew is just like icing on the sugar. Delectable blend 😛

Commonwealth Games 2014 Speciality – Recipes for Athletes

If anyone asks me where would I like to go this season, my answer would certainly be either Brazil for FIFA 2014 or Scotland for the largest multi-sport event, 2014 Commonwealth Games. With 4,950 athletes, belonging to 71 countries, participating in 17 different events, would be worth watching. Isn’t it? I’m sure we all will be very busy enjoying the wonderful games from 23 July to 3 August, 2014. An athlete is judged by his wellness and fitness, the exercises involved and the food that he/she eats. Nut Berry Oatmeal – It is a common saying, “Eat breakfast like a king”. I completely agree with this statement. We must begin our day with something healthy. What could be a better option other than nut berry oatmeal? This is a quick and easy recipe, it is loaded with nutrients as well. The simple breakfast requires skim milk, oatmeal, flaxseed meal, berries of your choice, nuts of your choice and brown sugar or honey. Go for it if you are a real fitness freak. You just require to boil the milk first, add oatmeal and flaxseed meal and keep stirring on low heat till the desired consistency is reached. Pour into the breakfast bowl and top up with berries and nuts. For more nutritious burst, you can also add seasonal fruits to it. Enjoy the healthy treat!

Avocado Kiwi Green Smoothie

Avocado Kiwi Green Smoothie

Kiwi-Avocado Smoothie with Lime and Honey:– Breakfast is incomplete without smoothie. The first thing that comes to our mind while thinking about health is smoothie. Isn’t it? Smoothy is a great way of including seasonal fruits/vegetables in your diet as it’s very nutritious. Kiwi-avocado smoothie is a healthy way out. The combination not only boosts up the nutritional value but it’s tasty as well, when accompanied by honey and lime. Yummzz!! All you need to do is, blending ripe avocado, kiwi, lime juice, honey and milk of your choice (Almond milk, soy milk, coconut milk). Add two-three ice cubes, though I consume it in purest form. This combination is very popular among fitness freaks, I personally love it. 🙂

Chard and Bacon Quiche

Chard and Bacon Quiche

Chard and Bacon Quiche Whether, it’s breakfast or brunch, quiche is something I love to relish. All you require is purple onion, Swiss chard, bacon slices, lowest calorie cheese or vegan cheese and eggs. Infact, you can use spinach plus chard. There are variety of vegan cheese available in the market. You can combine all the ingredients and bake them. And here you are with the yummy delight.
