Buddhism and Thukpa – Keep it Simple

The fundamental precept of Buddhism is Interdependence or the Law of Cause and Effect. This simply states that everything which an individual being experiences is derived through action and experience. From this understanding are derived the Buddhist theories of consciousness and rebirth”. That’s how the 14th Dalai Lama, Tenzin Gyatso explains Buddhism in his autobiographical book “Freedom in Exile”. If I were to simply decipher those lines written above, it’d be – whatever you do, its consequences will follow you. If you do good, then you’ll meet good and if you do something bad, then of course you know what. It’s Karma. Since this blog is about food – well I should say since I am a foodie – we’ll diverge slowly towards food.

The way he described Tibet and its beauty is exceptional. Though I have never been to Tibet but I can somehow get a feel of that place – Mountains, snow, people still living that simple life contrary to their neighbor. Though Tibet has changed, thanks to China. I won’t get into political things. Tibet’s temperature – which is quite cold – gives it a unique cuisine. It’s mainly meat and butter – you need calories, a lot of calories and heat. Being Dalai Lama is about being simple, keeping simple and at times eating simple and healthy recipes. As a kid, the 14th Dalai Lama loved the visits from her mother to the Potala Palace. This is a palace where he was kept separated from his family to become a spiritual leader in the future. Apart from motherly love, there is one more reason he loved such visits – Thukpa. Best part is that you can add in veggies of your choice. Let’s make this Tibetan noodle soup and try to make it good else Karma will haunt us!


For Thukpa:-

Salt as required,

Pepper as required,

Coriander as required,

300 gms Rice Noodles,

100 gms sliced Carrots,

½ sliced Red Capsicum,

1.5 litres Chicken Stock,

300 gms diced Chicken,

2 pieces Green Onions,

1 tablespoon Lemon Juice,

1 tablespoon Vegetable Oil.

For Spice Paste:-

1 chopped green chilli,

1 chopped small onion,

2 chopped garlic cloves,

1 teaspoon ground cumin,

1 pinch asafoetida powder,

1 teaspoon chopped ginger,

½ teaspoon ground turmeric,

200 gms chopped tomatoes,

¼ teaspoon ground timur powder.

Preparation Method:-

  1. First of all make spice paste. Combine all the ingredients in a blender. Set aside.

  2. Heat oil in a saucepan over medium heat. Add spice paste and cook, stir for 7 minutes. Pour in chicken stock. Bring to boil. Simmer for 15 minutes. Add chicken thigh and simmer for 10 minutes. Remove from stock and shred roughly.

  3. In the mean time bring 2 litres of water to boil in a large saucepan. Add rice noodles. Cook for 2 minutes. Place in huge strainer and pour cold water over it such that noodles don’t stick to each other. Drain water and set noodles aside.

  4. Add carrot and capsicum to stock. Simmer for 3 minutes until vegetables are a bit tender. Add lemon juice and season to taste.

  5. Divide the noodles in bowls. Top with chicken. Ladle stock and vegetables over the noodles. Serve!

Food for A Soldier on Memorial Day

John F. Kennedy says, “my fellow Americans, ask not what your country can do for you, ask what you can do for your country”. This reminds us of nothing but Memorial day. I was watching this movie Saving Private Ryan and like always, cried. Whenever I watch war movies – though I don’t watch frequently – I feel angry as well as sad. Angry because we lose young soldiers to a war which has no end. Sad because we just lose them forever. Not only here in America, I guess this is the story of most of the countries where soldiers sacrifice their life. However, their death never goes in vain. We feel proud of our soldiers who die for their country so that we can live on to sing songs for them.

We actually do that by celebrating Memorial Day every year on the last Monday of May. This day has become a part of America’s culture with its long history. It is an emotional day as we remember those soldiers who came back home, with the national flag over their coffins. But we humans are so good at getting adapted to situations that we remember them with smiling faces. We adapt, we accept and we survive. This is good, isn’t it? Soldiers leave home for months and sometimes years. They are away from home, family and that “homely” food – I hate stuffing my food love everywhere. Let’s try this simple and healthy recipe for not so simple soldiers.

Steak and Pasta Salad


8 ounces Pasta,

1 teaspoon Basil,

2 tablespoon Butter,

1 pound Beef Steak,

2 tablespoons Olive Oil,

1 cup chopped Spinach,

1 tablespoon Soy Sauce,

1/4 cup chopped Shallots,

1 teaspoon minced Garlic,

1/2 cup sliced Black Olives,

1/2 cup Sun-dried Tomatoes,

1 tablespoon chopped Parsley,

1/2 cup crumbled Feta Cheese,

3 tablespoons Sunflower Kernels.

Preparation Method:-

1. Take a pot. Add in water and bring the water to boil. Add pasta and cook till done. When cooked, drain. Then toss with olive oil and keep warm. In the mean time, melt 1 tablespoon of butter in a skillet over medium heat.

2. Broil the rib-eye from both sides. Make sure it is cooked well depending on the thickness of the meat. Remove steak from skillet. Cut into bite size pieces. Melt remaining butter in the skillet. Stir in garlic and shallots.

3. Cook for 12 seconds until fragrant. Then return the steak to the pan. Cook for another 5 minutes till done. Stir in the soy sauce. Cook till steaks are well coated with sauce.

4. Remove the skillet from heat. Stir in the sun-dried tomato pesto, spinach, basil, parsley, olives, feta cheese and kernels. Toss with the pasta. Serve in large family bowl.

Angela is my neighbor and we spend a lot of quality time together, especially on weekends. Yesterday was her son’s birthday party. Kids await for their birthday party throughout the year. The joy on their face for this special day, makes us forget all the pain and stress in life. Tom turned 11 this year and just as all the birthdays, Angela wanted to make it special for him and so I. Since on weekdays we hardly have anytime, we have to go for quick and easy recipes keeping health into consideration as we all love our children.

Burrito – Kids love to pick this Mexican and Tex-Mex food. Whole wheat rolls with tempting filling such as diced grilled chicken, tomatoes, grated carrots and greens make an excellent healthy snack loved by people of all age groups. You can also stir-fry these veggies. Serve it with your favorite sauce. I usually pair burrito with my fav dip recipe, Vegan Walnut and Red Pepper Dip. You must give it a try as well.

Fruit Salad with Ice cream – Fruit salad with Ice cream is a good way to make your kids eat seasonal fruits. The recipe is quite flexible. Add in diced fruits (seasonal fruits) like watermelon, mango, grapes, bananas, cantaloupe etc. Take scoops of ice-cream and top on the salad. I usually use strawberry and butterscotch flavor. Serve in ice-cream bowls as shown. The bowls will be empty in no time. Kids will go bonkers over it!

Sweet and sour Meatballs – Ah! Here it comes. I love meat recipes. Do not make this recipe too spicy. You can prepare the meatballs in advance. Prefer baking the balls rather than deep frying them. Also you can fry the paste a day before birthday party. I prefer Italian style of preparing the sauce for meatballs. It consists of onions, carrot, celery, parsley, garlic, tomatoes, basil, black pepper. Enjoy the yummzz!

The aroma of the bake is simply irresistible. It is all about ingredients and their values. I realized that cooking is a way to channelize my energy. Looking at the hot steam of rice is more meditating to me than a proper meditation. It is the perfect way to use that extra energy in cooking rather than acting weird with your family. Cooking doesn’t mean that you have to use all the spices and cook something great, it’s about knowing the value of each ingredient you use. Simple dishes are a therapy for you.  You should go for something healthy like herbs, oil and roots, which are plenty in this app.  I’ll let you all know the ones I have used.

Enjoy Vietnamese New Year with Coconut Pork Curry

Did you know that Tet is the common term for the Vietnamese New Year? It is held on the first day of first month according to the Lunar calendar. Tet marks respect and remembrance for Vietnamese. People celebrate New Year with their dear ones. Tet calls for celebration during the agricultural year. Tet is a party time similar to Christmas and New Year. People invite their close friends and relatives for dinner, decorate their houses with  branches of peach blossom, kumquat tree and colorful flowers. Everything is decked up in yellow and red color as it denotes good luck.

There are lot of goodies prepared on this day. These include banh tet, pickled onions, boiled chicken, mung bean pudding, Vietnamese sausage, red sticky rice, thit heo kho etc. Thit heo kho is recipe consisting of pork and eggs in coconut juice. Coconut water is the clear liquid inside the coconut. It helps in losing weight, gives glow to our skin, reduces effect of hangover, facilitates digestion, boosts hydration and reduces blood pressure. Moreover pork is good for you, full of life-preserving nutrients and vitamins. It’s combination with coconut water and hot spices is superb. I would love to pair it up with traditional sticky rice. This recipe is a breakdown of New Year food staples right from Asian cultures.

4 star anise,

375 ml water,

60 ml fish sauce,

½ chopped onion,

750 ml coconut juice,

60 ml light soy sauce,

1 kg pork belly cubes,

2 chopped garlic cloves,

2 chopped spring onions,

2 tablespoons brown sugar,

4 chopped French shallots,

1 tablespoon vegetable oil,

Green onion for garnishing,

8 hard-boiled and peeled eggs,   

1½ tablespoons dark soy sauce,

½ teaspoon freshly ground black pepper.

Preparation Method:-

  1. Combine shallots, spring onion, pork, garlic, fish sauce, soy sauces, pepper, sugar and star anise in a bowl. Stir to coat the pork. Marinate in the refrigerator for at least 3 hours.

  2. Heat the oil in a large, heavy-based saucepan over medium-high heat and add the onion. Fry until golden then remove the pork from the marinade and add to the pan. Seal over high heat.

  3. Add the marinade, coconut juice and water. Bring to the boil and skim off any scum that rises to the surface. Gently simmer for 1 hour, skimming occasionally.

  4. Add the eggs and simmer for a further hour. Garnish with coriander and serve with jasmine rice.

The turk turk festival is here, yes Thanksgiving with grand Thanksgiving recipes. I would love to spend minimum time in the kitchen on that auspicious occasion. My sister and her hubby will be here along with the kids. So I thought of preparing a quick and easy recipe, that is healthy too. Kids are gonna love it. This is called Healthy Turkey Mushroom Burgers. The best part is that you can include the veggies of your choice and low fat cheese if you are a fitness freak.

I love the recipes that are tasty as well as healthy. Low-sodium cheese will help you in finding among healthier cheese and that is what I opt for. Turkey breast is a good choice for a healthy diet. It is an excellent low fat and high protein food. This white and lean meat also helps in reducing cholesterol levels. It also boosts up the immune system. And as far as the taste is concerned,  Worcestershire sauce adds flavor to the recipe along with the garlicky touch of garlic salt. So here we go with the servings for 2.


A pinch Garlic salt,

4 slices Swiss Cheese,

1/2 tablespoon Olive oil,

2 split Hamburger Buns,

1/4 teaspoon Onion Salt,

1 cup sliced Mushrooms,

A handful chopped fresh Parsley,

1/2 tablespoon Worcestershire Sauce,

1/2 pound lean spiced Turkey breast (2 slices).

Preparation Method:-

1. Stir fry in olive oil, mushrooms, parsley, worcestershire sauce, and onion salt. Pan-fry the spiced lean turkey breasts.

2. Place the base of burgers. Add cheese slice, turkey slice, again a cheese slice and mushrooms. You can add on greens if you want to.

3. Enjoy with French fries and roasted veggies. Yummzz..

Unless we are preparing curry, broth or soup, use minimum water. Addition of ingredients such as ginger and cashews, give it a gingerly plus nutty taste. Ginger cure various stomach problems. It relieves us from arthritis, menstrual pain, respiratory infections and bronchitis. Ginger tea is widely recommended if one is suffering from cold, cough and flu. Cashew prevents cancer and keeps the heart healthy. It is very good for hair and skin. It keeps the bones strong. A delish stir-fry of broccoli, carrots, pak choi, kale with the garlic ginger blend and soya sauce sooths the taste buds. Cashew is just like icing on the sugar. Delectable blend 😛

I’m sure we all will be very busy enjoying the wonderful games from 23 July to 3 August, 2014. An athlete is judged by his wellness and fitness, the exercises involved and the food that he/she eats. This can be served with low-fat dip of your choice, salads and toasts. You can add variant of this also by adding boiled peas, I do this. A drink along with it drives me crazy! 😛

3. During my college I started yoga and continued it for 6 years and now I am fit and fine.

5. I am very fond of homemade food. I and my mother wanted to open a small food corner but fell short of money.

6. I love pets, especially dogs and parrots, I loved the small farm we had when my father was alive.
