Diabetic Friendly Chocolate Trifle

It was my grandma’s birthday and I decided to prepare a sweet treat for her. She is diabetic, but who says not to consume chocolate while we are watching our sugar intake. She is very fond of desserts just like me. Last time I prepared Diabetic-friendly Chocolate Cheesecake Recipe to cheer her up on this special day. I have something yet special for her this time. She loves cake recipes. Enjoy making rich and moist trifle for your loved ones and bring a huge smile on their face. Whatever ingredients I am using are diabetic friendly. Chocolate lowers cholesterol level. It prevents memory decline. It reduces heart disease risk and also prevents stroke. Cherries on the other hand is booster of Vitamin C and antioxidants. It also helps in reducing bad cholesterol. So let’s bake the cake.

Yummy Chocolate Trifle
Yummy Chocolate Trifle Cups

Ingredients:-

3/4 cup Water;

2 cups fat-free Milk;

1 package pitted Cherries;

2 drops of Red Food Coloring;

Sugar-free Chocolate curls to taste;

2 cups thawed Fat-free frozen Whipped Topping;

1 package Chocolate Sugar-free, Low-fat Cake Mix;

1 package Chocolate Sugar-free, Fat-free Instant Pudding Mix.

Preparation Method:-

1. Preheat oven to 375 D.F.

2. Mix cake mix using 3/4 cup water. Bake till cake is done, use knife to check this.

3. The cake mixture should not stick to the knife. Let the cake cool in pan. Remove from pan. Cut into small cubes.

4. Prepare pudding mix using 2 cups of fat-free milk. Chill for at least 40 minutes.

5. Thaw cherries reserving 1/4 cup juice. Mix cherries, food coloring and juice together.

6. Place half of cake cubes in a 3-quart trifle bowl. Spoon half of cherries over cake. Spread 1 cup pudding over cherries, and top with half of whipped topping.

7. Repeat layers. Garnish with chocolate curls. Cover and chill at least 8 hours. You can also serve in glasses as I have, in the same manner with feasible proportion. Enjoy!

Sansa Stark and her Love for Lemon Cake

Do you like always write on festivals?”

Oops. Thanks. I’ll make sure that I change my ‘routine’ ASAP”, I replied with a confused smile.

She was my 23 year old neighbor. This conversation happened before my Jazz Fest and Jambalaya blog. I needed to move on from Festivals. “I’m going to watch Game of Thrones. Talk later” she said this and hurried to her home. Game of Thrones is an American fantasy drama television series, loved by millions.

Voila! It helped. I was on a GOT marathon and consequently fell in love with “Jaqen H’ghar”, mumbling ‘Valar Morghulis’ at almost everything. This marathon ceased after the 4th season . I called her up and she was like “This is the year when they air season 5. They actually started it and two episodes are out”. Immense relief! There is one character which I noticed has grown up from a sweet little beautiful girlie girl to a damsel in distress and gradually to an alert and an astute woman when wisdom and tragedies hit her hard. Irrespective of all the troubles she has been through (including Joffrey), she walked through fire with tears and survived. Partly because of her will to survive and partly because of Lemon Cakes. When Lady Olenna of House Tyrell offers lemon cake to a ‘sad’ Sansa-

Olenna Tyrell: “Shall we have some lemon cakes?”

Sansa Stark: “Lemon cakes are my favorite.”

Olenna Tyrell: “So we’ve been told.”

I was like ok, people know this affair. Even Little finger tries to woo her by offering Lemon Cakes.

They are appetizing enough for me to try them in my kitchen. I love cake recipes. So let us make these Lemon Cakes for this sweet damsel in distress.

Lemon Cake
Lemon Cake

Ingredients for Cake:-

6 Eggs,

1 teaspoon Salt,

1 cup Sour Cream,

1 cup Unsalted Butter,

1 teaspoon Baking Soda,

3 cups All-purpose Flour,

1/3 cup Fresh Lemon Juice,

2 tablespoons Lemon Zest,

2 1/2 cups Granulated Sugar.

Preparation Method for Cake:-

1. Preheat oven to 350 D.C. Take a pan and butter and flour it. In a medium bowl, whisk together flour, lemon zest, baking soda and salt. Set aside.

2. In a blender, beat butter and granulated sugar for 5 minutes. Add eggs. Mix in lemon juice.

Keep adding flour mixture and sour cream, until incorporated. Do not overmix. Add to the bundt cake pan.

3. Bake until knife inserted in center of cake comes out clean. Bake for 50 minutes. Cool for 30 minutes.

4. Turn out onto a rack to cool completely. Poke holes all over the cooled cake, and brush with lemon icing.

5. If the cake does not absorb all the syrup at once, allow to sit for 20 minutes before continuing to brush with any remaining syrup.

Ingredients for Lemon Icing:-

1/2 cup butter,

2 tablespoons lemon juice,

1/2 teaspoon vanilla extract,

3 cups confectioners’ sugar.

Preparation Method for Lemon Icing:-

1. Combine butter, lemon juice, vanilla, and sugar. Beat until light and fluffy.

2. Add more sugar or lemon juice. Adjust the consistency as needed.

For my vegan friends, vegetable and corn cutlets is a great option. I love pairing cutlet with my favorite Cheese and beer dip. Cutlets with wine is a great combo. You can either deep-fry or simply bake this recipe, if you are a fitness freak. Another method is, shallow fry the fish and then bake it such that the inner portion is fully cooked. Enjoy the hearty treat.

Heart Shape Pizza (Cheese and Pepperoni Pizza) – Enjoy the hot cheese, fresh from oven pizza in juz 15 minutes. What can be a better quick and easy treat than this? All you needa do is spread pizza sauce on pizza crust. Top it with pepperoni, seasoning and Mozzarella cheese. Sprinkle with Parmesan cheese. If you are crazy about pepperoni, don’t hesitate adding more, as I do. Bake the classic crust for 15 minutes. Don’t forget to use pizza base with heart shape.

Mini Heart Pies (Cottage Cheese and Ricotta Cheese Pies) – I have something for my vegetarian pals also. A heart shape cookie cutter makes great mini pies. You just need to roll the dough, cut heart shapes, add in the stuffing of stir-fried spinach, with spices of your choice and ricotta cheese. Incase if you are vegan, add tofu instead of cheese or simply vegan cheese. These can be prepared in advance. You just need to make it more crispy before serving. Enjoy with your favorite dip/sauce.

It’s well said, “Love is when the other person’s happiness is more important than your own.” I completely agree with this saying. Do you? You can do anything to see your baby smile. Gift your valentine, something that’s original, homemade and your creativity. Isn’t that a great idea? I’m sure it’s gonna win the heart. Nothing would be better than gifting soft, lite pink strawberry macaroons made with your whole heart and soul. The best part is that you can add in any cream filling, keeping in mind the choice of your partner. Hope you liked my crazy Valentine’s Day ideas. For now let’s start with this sweet affair.

Ingredients:-

4 large egg whites,

1/3 cup caster sugar,

1 1/2 cups icing sugar,

4 teaspoons almond meal,

Food coloring as per choice.

Preparation Method:-

1. Preheat the oven to 150 D.C. Place egg whites and caster sugar in a bowl. Beat with blender until stiff enough to turn the bowl upside down without it falling out. Continue to whip for 2 more minutes.

2. Add gel or powdered food coloring and continue to mix for a further 30 seconds. Sift the almond meal and icing sugar and salt twice, discarding almond lumps.

3. Add the egg white mixture. Pipe onto trays lined with baking paper. Prefer heart shape if you are gifting.

4. Bake in the oven for 20 minutes. Check if one comes off the tray clean, if not bake for a little longer.

5. When cool, taking two, add in the cream of your choice. I prefer strawberry cream. Enjoy!

Rebel Wilson, the 28 year old Australian actress, writer and a stand-up comedian, flew home for celebrating Christmas with her family. Neither did she prepare turkey nor honey glazed ham, but was seen munching on the traditional Pavlova or ‘Pav’. This is well portrayed on social sites such as Twitter and Facebook. The recipe has a crunchy and crisp outer-shell and is soft and moist from inside. The texture makes me crave for it right away. I love authentic recipes. Hope you enjoyed Chocolate Lamington.

Did you know that Pavlova has a historical significance? Pavlova is a dessert. It is named after a famous Russian ballet dancer called Anna Pavlova, when she visited Australia. There is yet a long story behind this. Pavlova makes a great summer dessert in entire Australia and New Zealand. Different fruits added to this recipe, give a colorful topping thereby making the dessert yummier. So let’s celebrate Australia day with authentic Pavlova.

Ingredients:-

16 Egg Whites,

2 diced Kiwi fruits,

A pinch Cream of Tartar,

300 ml thickened Cream,

1 1/2 cups Caster Sugar,

1 teaspoon Vanilla Extract,

250 gm diced Strawberries,

Mint leaves for Garnishing,

1 tablespoon Icing Sugar mixture.

Preparation Method:-

1. Preheat oven to 120 D. C. Line a baking tray and baking paper. With an electric mixer, beat egg whites until stiff peaks are formed.

2. Now add caster sugar. Beat until the sugar dissolves. Then add cream of tartar. Beat for 1 minute.

3. Spoon mixture onto circle. Using a spatula, shape into a circle as shown. Make furrows. Bake for 1 hour or until firm. Turn off oven.  Allow to cool.

4. For the cream, using an electric mixer, beat cream, icing sugar and vanilla until soft peaks form.

5. Place the cool pavlova on a serving plate. Top with cream mixture, mint leaves and fruits as shown. Serve.

Enjoy Traditional Aussie Meat Pie on Australia Day

My neighbor’s little daughter came running up to me and was singing the song, ‘I am Australian’. The song is jam packed with intense meaning. This reminded me that Australia Day is approaching. Hope you liked my blog, Chocolate Lamington, which is also a traditional Australian cake. Today I’ll serve you with classic and spicy Aussie treat. I am very fond of meat recipes. The yummilicious Aussie Meat Pie is a small pie, filled with ground beef, onions and gravy. It is mostly topped with tomato sauce to compliment with the crazy crust. Vegemite is also used in the recipe. Vegemite is delectable Australian spread that is made from used brewer’s yeast.

Meat pie is considered an iconic food in Australia and New Zealand and is served for sure on the auspicious Australia Day. Even after lot of innovative goodies coming up every year, the pie continues to have top ranking in the heart and mind of millions. These traditional pies make a delectable party and picnic food as they are simple to make and easy to serve. Meat pies are popular in different cuisines example Nigerian, British, Lebanese, Australian. The ingredients, method and flavor vary from place to place. Here it goes…

Ingredients:-

1 beaten Egg,

3/4 cup Beef Stock,

3/4 cup Tomato sauce,

1 tablespoon Cornflour,

1 teaspoon Vegemite,

1 tablespoon Olive Oil,

1 chopped Brown Onion,

1 tablespoon Barbecue Sauce,

500 grams minced Lean Beef,

2 sheets thawed frozen puff pastry,

2 tablespoons Worcestershire sauce,

2 sheets thawed frozen Shortcrust Pastry.

Preparation Method:-

1. Heat oil in a saucepan over medium heat. Add onion. Cook until soft. Add minced beef. Cook for 4 minutes. Stir until brown.

2. In another bowl, mix cornflour and 1 tablespoon of stock to form smooth paste. Add the remaining stock. Now add stock, sauces and Vegemite to the mince. Bring it to boil. Reduce heat to low. Simmer for 8-10 minutes. Cool the mixture.

3. Preheat the oven to 220 D. C. Place a baking tray into oven. Grease the pie pans.

4. Cut circles from shortcrust pastry as desired. Fill with the beef mince. Brush the rims with water. Cut circles from puff pastry. Place over meat. Press to seal. Trim the rest. Brush with egg and then season.

5. Place pies onto hot tray. Bake for 25 minutes or until golden brown. Enjoy the meaty treat.

Celebrate Australia Day with Traditional Chocolate Lamington

Australia Day, falling on January 26, has become nation’s largest annual public celebration. It brings together Australians from all walks of life. Make sure to grab your spot along the streets of Australia to cheer the bulk parade participants. It’s the national day and ultimate time to celebrate with classic and traditional dishes. Australia has a rich variety of food and drinks. Last year, I shared with you Australian Cocktails and I’m so glad that everyone loved to dance with those drinks.

This time I’ve come up with the traditional dessert called Lamington. Lamington are squares of sponge cake that are dipped in melted chocolate and grated coconut. Lamingtons are usually made up of stale cake. I have used fresh cake. So the trick is to freeze it. After this, dip the lamination when it is slightly frozen. Though I am equally fond of strawberry and raspberry flavor, this time I tried Chocolate Lamington. You can also add in strawberry cream in between the cake as I have done. 

For the Cake:-

3 eggs,

1/4 cup milk,

1/2 cup sugar,

1/4 cup cornflour,

3/4 cup self raising flour,

3 teaspoons melted butter.

For Icing:-

1/2 cup milk,

3 1/2 cups icing sugar,

1/3 cup cocoa powder,

2 teaspoons melted butter,

2 cups desiccated coconut for coating.

Preparation Method for Cake:-

1. Preheat oven to 180 D.C. Now grease and flour a square shaped cake tin. Take a bowl. Beat eggs, sugar, butter and milk in it. Sift this mixture in flour and cornflour mix. Mix until well combined.

2. Pour the mixture into the greased tin. Bake in preheated oven until a knife inserted into the centre comes out clean. Bake time is 25-30 minutes.

3. Allow to cool. Cut into smaller squares. Place in the freezer until it begins to harden, for 1 1/2 hours, uncovered.

Preparation Method for Icing:-

1. Stir butter, milk and cocoa powder, together. Then stir in the icing sugar.

2. Dip frozen cake squares into icing mixture and then into grated coconut.

3. Place on baking paper and allow to defrost. This must take 1 1/2 hours at room temperature.

Gala with Gluten-free Chocolate Christmas Muffins

Christmas is here and as I promised, I have something for everyone, so here are special muffins for the people allergic to gluten. Hope you liked my Strawberry Marshmallow Cake. I’m trying something out with cherry now. Cherries are wonderfully delicious and a full fledged package of health nutrients and unique antioxidants. These are low in calories and ultra rich source of vitamins and minerals. Cherries heal fibromyalgia (painful muscle condition), gout arthritis and sports injuries.

A person on paleo diet prefers lean proteins that support strong muscles, healthy bones and improves immune function. Quinoa flour, coconut flour, amaranth flour, teff flour and chia flour are very friendly for paleo diet. These flours can be used in bakery products especially muffins and cake and that is what I have done here. You can also use the mixture of four flours in equal quantity. You will definitely not mind baking the bakery-worthy muffins for the people of all age group in your family. Will you?

Ingredients:-

150 ml Yogurt,

2 beaten Eggs,

1 teaspoon Soda,

100 grams melted Butter,

250 grams Gluten-free Flour,

140 grams dried sour Cherries,

100 grams chopped Dark Chocolate,

100 grams chopped White Chocolate.

Preparation Method:-

1. Heat oven to 200 D.C and place a 12 hole muffin tin, with some paper cases. Sift the flour and soda bicarb in a large bowl. Add in the thawed cherries, chocolate and sugar.

2. Then add beaten eggs, yogurt and butter. Stir to combine. Don’t over-mix as the muffins will turn out tough.

3. Fill the paper cases and bake for 20 minutes, until risen and golden brown. Cool them. Garnish with chocolate and cherries as shown. Enjoy!

You can also use homemade garlic and cheese bread, if time permits. I prefer cheese and garlic bruschetta bread. Add on it, the topping of your choice. Spicy mayo and honey cream form a great topping. To it add diced ham and roasted veggies. Just bake the bread for 2 minutes before adding the topping. Get an eye-catching and sumptuous party appetizer.

Snowy Deer Muffins (Chocolate/Vanilla Muffins) – Any party is incomplete without desserts, isn’t it? Make the muffins of your choice. They can be simple, raisins or berry muffins. The game here is only the way you present it. Prefer a smooth base and spread chocolate evenly. You can also add vanilla cookie on the top, as shown. Add pretzel to make horns of the deer. Decorate eyes with berries/small candies. Enjoy the cute treat with lots of goodies within.

X-Mas Tree pizza (Mini Veggie Pizza) – Prepare the pizza base beforehand. You can make variant of shape using special baking cutters eg. Christmas tree or Star-shape. Ah! kids are gonna love it. Just bake with your favorite cheese and veggies. The taste will be doubles seeing these mini cheesy pizza bites. Even a novice cook can master the art of preparing pizza. So let the fun begin with this veggie and cheesy treat.
