Australian Vegemite and Cheese Scrolls

Ingredients:-

250 ml Milk,

Salt to taste,

Pepper to taste,

Vegemite to taste,

250 grams Self Raising Flour,

30 grams chopped cold Butter,

55 grams grated Swiss Cheese.

Preparation Method:-

1. Preheat the oven to 200 D.C. Grease with butter, a medium sized baking tray.

2. Add flour, butter and seasonings in a food processor blend until it resembles fresh breadcrumbs.

3. Now add milk. Mix until combined. Tip the dough out on a slightly floured bench top. Roll into a 30 x 45 cm rectangle.

4. Spread Vegemite and top with grated cheese generously . Roll into a log. Cut into 2 cm slices. Place onto a greased oven tray.

5. Bake for 18 minutes or until golden. Serve warm or at room temperature with hot tea or coffee.

Wine, Baba Ghanoush and Baked Chicken – It’s Something

When was the last time you changed a light bulb? Today, yesterday, last month, a few months back or at most last year. These are the possible responses for this question. But there is a light bulb, which has been illuminating various places since 1901. Known as the “Centennial Light”, this bulb is currently housed in the Fire Department of Livermore, California. Due to its 114 years of service, this bulb is now very dim, but is still on. This will lead to food, wait! I’ve been planning for a trip to Del Valle Regional Park, near Livermore. I thought a bit of hiking might help lose those ‘thunder thighs’. However, this trip involves hiking, which eventually will lead to hard work, hence it’s still a plan. I was reading about Livermore and places to see around. This bulb topped the list with Wine securing the second position.

Wine growing is a part of Livermore’s culture having wine tasting tours. With around 40 wineries, Livermore sure has a long lasting bulb illuminating its Wine history. Though I’ll be going with Sigalas Assyrtiko because of its acidic, salty and briny flavors. So now we have a bulb (which we can’t eat) and Wine (which we can’t eat) far an upcoming recipe. We need something to eat – Baba Ghanoush. This simple appetizer full of various seasonings and egg plant should go with wine. I know, baba ghanoush and wine is a bit eccentric combination, but then I thought to give it a try. Well I had some guest yesterday all of a sudden, I juz had eggplants and some chicken in the fridge. This bulb reminds me of The Smiths song – There is a light that never goes out. Put it on your iPod, grab your fav wine and crackers, bake the eggplant, bake the chicken, and voila, you came up with something!

Ingredients:-

3 Eggplants,

1/3 cup Tahini,

1/2 cup Lemons Juice,

3 tablespoons Olive Oil,

2 minced Cloves Garlic,

Kosher salt as required,

Ground Black Pepper as required.

Preparation Method:-

1. Heat the oven to 450 D.F. In the mean time, rub outside of the eggplants with olive oil. Add in a roasting plan. Roast eggplants well until the skin has charred (goes blackish brown) and the interior is tender for 20 minutes. Let the eggplants cool.

2. When cool, remove the skin and seeds, roughly chop the flesh. Add to a bowl. Blend in a food processor.

3. Into the processor bowl add tahini, lemon juice, garlic, salt and pepper to taste. Also add in a few teaspoons of cold water. Process the mixture to a coarse paste. Keep adding a bit more water as needed to allow the mixture to blend well.

4. Adjust the seasoning with salt and pepper to taste. Serve with crackers, baked chicken and wine.

Interstellar Food – A Meal with the Stars

“This is one small step for a man, one giant leap for mankind.” Neil Armstrong said this and started jumping around on the moon. Whenever I watch this video, I feel as if in the end, everybody loves ‘space’ to jump around (pun intended!). Let it be on earth or on the moon. Astronauts stay in space for days and sometimes even months. It’s like a home away from home but just ‘too’ far away. So the question which always grills my mind is – WHAT DO THEY EAT IN SPACE? Though I knew that they used to have those toothpaste like tubes to have the food from times are changing and so is the ‘Interstellar Menu’. To keep the food edible for longer missions, it is dehydrated and packed in a solid form. Imagine taking a ‘bite’ of your chicken stew. All the fluid items like milk, soup etc. are dehydrated too in a powdered form.

Thanks to the NASA scientists, who made it possible to hydrate the food by mixing hot or cold water when in space and make food a ‘bit’ tastier. But no matter what, the mesmerizing aroma of the food drifts away before it can stimulate an astronaut because of almost zero gravity. So the exulting sensation of the food felt by the tongue and the nose is absent. But these men and women, do all this ‘in the name of science’. I respect these guys because if I would have been an astronaut, my kitchen would’ve followed me. Since food is important, astronauts are invited for tasting session where they can recommend the dishes for future missions. Though these days they have freeze dried sausage patties and much more but there is one thing Buzz Aldrin enjoyed in one of the missions – “Shrimp Cocktail”. From the work cocktail, I remember that I am very fond of preparing hot or warm cocktail recipes. He had something to say about it- “they were chosen one by one to make sure they would be tiny enough to squeeze out of the food packet, and they were delicious!” Let’s try this appetizer for our brave astronauts ‘in the name of science”.

SHRIMP COCKTAIL

Ingredients:-

For Court Bouillon:

1 lemon,

2 bay leaves,

1 diced onion,

5 sprigs thyme,

2 diced carrots,

1/2 bunch parsley,

10 cups cold water,

2 diced stalks celery,

5 diced garlic cloves.

For Shrimp:

Cocktail Sauce,

Lemon wedges,

1 pound rinsed shrimp,

1 tablespoon kosher salt.

For Cocktail Sauce:

1 cup ketchup

1 juiced lemon,

Hot sauce to taste,

4 teaspoons prepared horseradish,

1/4 teaspoon Worcestershire sauce.

Preparation Method for Shrimp Cocktail:

  1. Add water, onion, garlic, lemon, parsley, carrot, celery, thyme and bay leaves in a pot. Bring to a boil. Simmer for 20 minutes.

  2. Add shrimp into the liquid. Turn off the heat. Cook shrimp. Stir occasionally for 3 minutes. Drain and cool. Peel them. Refrigerate if you are not serving immediately. If refrigerated, bring shrimps to room temperature for 20 minutes before serving.

  3. To serve put the cocktail sauce in glasses as shown. Loop the shrimp over the edge of the glass. Top the glass with sauce. Garnish with the lemon and serve.

Preparation Method for Cocktail Sauce:

  1. Combine ketchup, lemon zest, juice, Worcestershire sauce and horseradish in a bowl.

  2. Add hot sauce. Mix well. Refrigerate until ready to serve. Enjoy!

Green Chicken (Mint Sauce Chicken) – Having green chicken on St Patrick’s day is definitely a big hit! The idea behind this green chicken is simple. Broil chicken pieces with ginger and garlic paste coated on them. Set aside. Prefer boneless. Prepare a green sauce (this does not require cooking). In the blender, add in coriander, mint leaves, lemon juice, green chillies, salt and pepper. Take a wok and add in broiled pieces. Add the green sauce, toss the pieces and heat for two minutes. Serve at once as bitings on St Patrick’s day.

Valentine’s Day Food – Sushi Hearts

The day of love is here! Everyone is undoubtedly planning to surprise their spouse with a token of love and admiration. Hope you enjoyed my Valentine’s day ideas for food. My Aunt Poly recently had an awesome trip to Japan. She had to attend her relative’s wedding. The couple planned to go for a week to utilize their visit to the fullest. I think it’s a great idea. Yesterday, they came in for tea and were talking about the yummy Japanese food other than anything else. She loved sushi. It suddenly struck my mind to prepare the same for my loved one, this Valentine’s Day. Sushi stands among the most popular Japanese food. Sushi is basically a cold roll of fish and rice. The ingredients and preparation methods varies from place to place.

Day by day, the popularity of this Japanese food is increasing. This results using the recipe in numerous delectable. Some unique Japanese ingredients have been used in the recipe which are readily available in the stores nearby. Nori seaweed sheet is an edible red seaweed that is popular in East Asia. I have used wasabi paste here. Mix equal amounts of wasabi powder and water to make wasabi paste. Wasabi is a Japanese plant with thick green root tasting like horseradish. Wasabi powder is easily available in the market. I have also used sushi ginger AKA gari. This is nothing but thinly sliced young ginger marinated in a solution of sugar and vinegar. So surprise your love with something unique!

Ingredients:-

200 grams Cooked Rice,

4 Nori Seaweed Sheets,

4 tablespoons Sushi Rice Vinegar,

For Seasoning:-

1 tablespoon Soy Sauce,

1 teaspoon Wasabi Paste,

20 grams Sushi Ginger (Optional).

For Filling:-

2 thinly sliced Avocados,

200 grams Fish Roe Egg,

200 grams Raw Tuna or Salmon,

50 grams Sesame Seeds (optional).

Preparation Method:-

  1. Before you make sushi, prepare the sushi rice that will be used. Just mix cooked rice with 4 tablespoons of sushi rice vinegar.

  2. Slice avocado and fish into long, thin strips. Try keeping the thickness of both ingredients upto 2 cm.

  3. Take a sheet of nori seaweed and cut it in half before spreading cooked rice on it. Flip it over, such that rice is facing down. Place avocado slices and fish on the nori seaweed such that it’s covered.

  4. Take a sushi rolling mat. Compress rolls, so that they are tight and solid. Now push the side of the sushi roll furthest away from you down with the mat so that it starts spreading out.

  5. Our goal is to create a teardrop shape with the sushi roll. This will form one half of the heart piece.

  6. Then carefully peel away the plastic. Press two teardrop pieces together to create one whole heart piece. Serve the finished sushi to your love.

For my vegan friends, vegetable and corn cutlets is a great option. I love pairing cutlet with my favorite Cheese and beer dip. Cutlets with wine is a great combo. You can either deep-fry or simply bake this recipe, if you are a fitness freak. Another method is, shallow fry the fish and then bake it such that the inner portion is fully cooked. Enjoy the hearty treat.

Heart Shape Pizza (Cheese and Pepperoni Pizza) – Enjoy the hot cheese, fresh from oven pizza in juz 15 minutes. What can be a better quick and easy treat than this? All you needa do is spread pizza sauce on pizza crust. Top it with pepperoni, seasoning and Mozzarella cheese. Sprinkle with Parmesan cheese. If you are crazy about pepperoni, don’t hesitate adding more, as I do. Bake the classic crust for 15 minutes. Don’t forget to use pizza base with heart shape.

Mini Heart Pies (Cottage Cheese and Ricotta Cheese Pies) – I have something for my vegetarian pals also. A heart shape cookie cutter makes great mini pies. You just need to roll the dough, cut heart shapes, add in the stuffing of stir-fried spinach, with spices of your choice and ricotta cheese. Incase if you are vegan, add tofu instead of cheese or simply vegan cheese. These can be prepared in advance. You just need to make it more crispy before serving. Enjoy with your favorite dip/sauce.

This is a classic hot vegan dip that can be served with almost anything your soul mate likes whether it is crackers, chips or roasted vegetables. Do you really want the good times to roll? Serve her with something sizzling, tangy and spicy apart from your love.

Vegan Walnut and Red Pepper Dip

Ingredients:-

1 cup Water,

3/4 teaspoon Salt,

3 red bell Peppers,

1 small Garlic Clove,

1 1/2 teaspoons Paprika,

1 tablespoon Lemon juice,

2 slices Toast Pita Bread,

Black Pepper as required,

3/4 teaspoon ground Cumin,

1 tablespoon Balsamic Vinegar,

4 ounces toasted Walnut pieces,

2 teaspoons Extra-virgin Olive Oil.

Preparation Method:-

  1. Roast peppers over gas burner till they are black. Place in a bowl and cover with plastic wrap. Cool for 15 minutes. Peel and discard skin, stem and seeds. Keep aside.

  2. Toast pita bread until crisp. Break into 2 inch pieces and place in a bowl. Cover with water. Soak until soft for 10 minutes. Transfer to a sieve and drain well. Press out excess of water. Keep aside.

  3. Blend garlic and walnut pieces in a food processor. Now add paprika, cumin and reserved peppers and pita bread. Process for another 10 seconds.

  4. Add lemon juice, oil, vinegar and salt. Season with black pepper. Transfer to a serving bowl. Cover with plastic wrap. Refrigerate it overnight.

  5. Before serving, bring the dip to room temperature. Drizzle with oil. Garnish with walnuts. Enjoy with any snacks.

Tangy Pork Skewers with Yogurt Dip

Hey pals! It’s crazy Christmas month and I have not prepared pork since a long time. Last time I prepared Sweet and Sour Pork, and I’m glad that everyone appreciated it so much. So a big thank you. This time I thought of including a marinade recipe, coz it has a unique flavor of it’s own. Skewers add on to the party mood. Tangy food on the stick make a great appetizer. Everyone loves preparing skewers for their utmost ease and versatility.

A well prepared marinade not only keeps the grilling food flavorful and moist, but they make it healthier imbibing the citrus agent within. The best part is that this is a flexible recipe where in you can grill or fry pork as per choice. Nevertheless, they are a great addition to a buffet table. An appetizer is incomplete without crazy Christmas dips. Isn’t it? More than these tangy pork skewers, I’m excited about the cucumber, dill and yogurt dip. The winning dip would definitely score big at any gathering. This is truly a party dip. So, ready for the party fun with some real tasty yummzz?

Ingredients:-

2 cups Plain Yogurt,

8 small White Onions,

4 minced Garlic Cloves,

900 grams Pork Cubes,

1 diced Red Bell Pepper,

1 diced Yellow Bell Pepper,

2 tablespoons Lemon Juice,

1/2 teaspoon Ground Cumin,

1/2 teaspoon Ground Coriander.

Preparation Method:-

1. Prepare the marinade. In a bowl combine the yogurt, lemon juice, garlic, cumin and coriander. Mix well. Add pork, cover and refrigerate for about 6 hours.

2. Cut bell peppers into squares. Add pork, onions and peppers onto the skewers. Preheat the grill.

3. Grill for about 35 minutes or until pork is cooked properly. You can also fry incase you are fond of fried pork yummzz. Serve with your favorite dip.

Cucumber, Dill and Yogurt Dip

This is my favorite dip. The best part of this dip is that it can be made a day before the Christmas. Keep it in refrigerator and serve when the skewers are completely ready.

Ingredients:-

2 cups Yogurt,

1 tablespoon Salt,

1 grated Cucumber,

1/2 cup Sour Cream,

1 tablespoon Olive Oil,

1 minced Garlic Clove,

2 tablespoons minced Dill,

2 tablespoons Lemon juice.

Preparation Method:-

1. Take a bowl. Place yogurt in sieve. Cover with plastic wrap. Allow to drain in the refrigerator overnight.

2. Mix cucumber and 1 tablespoon salt in small bowl. Cover and chill 3 hours. Transfer drained yogurt to another bowl.

3. Mix in sour cream, lemon juice, dill and garlic. Squeeze out excess liquid from cucumber. Stir cucumber into yogurt.

4. Season with pepper. Cover and chill for at least 2 hours. Enjoy with skewers 😀

Christmas Colors Chilli Fish

Sweet and chilli flavored food is always welcomed on fests and occasions. For many of us, appetizers are the favorite part of the Christmas feast. Isn’t it? And on top of that tangy-spicy appetizer is something you can’t resist. So, I decided to prepare tangy fish. Yummzz! Hope you liked my recipe, grilled fish (cod), it is Cristiano Ronaldo’s all time fav. I am very fond of varieties of fish especially pomfret as it is rich in vitamin A, vitamin B3 and vitamin E. It also helps in fighting wrinkles and skin redness. It adds moisture to your skin.

Soy sauce is an awesome ingredient to flavor recipes. It’s the most common in Asian cuisine. Most dishes don’t specify the type of soy sauce that we use, but they vary wildly as per flavor, texture and appearance. I have used a strong one here to imbibe the Asian flavors. I have used homemade green chilli sauce here to add-on extra spice to the recipe. Tomato Sauce that is a bit sweet is recommended.

Ingredients:-

1 cubed Onion,

1 cubed Capsicum,

1 teaspoon Honey,

3 tablespoons Flour,

Olive Oil for deep frying,

1 teaspoon Tomato Sauce,

1 tablespoon Soya Sauce,

31/2 tablespoons Cornflour,

1 teaspoon Green Chilli Sauce,

1 bunch chopped Spring Onions,

250 grams cubed deboned Fish,

2 teaspoons Ginger-garlic paste,

1 teaspoon Black Pepper Powder.

Preparation Method:-

1. Make a thick batter of 3 tablespoons cornflour, flour ,1 teaspoon ginger-garlic paste, salt, pepper powder and water. Dip the fish pieces in this and shallow fry in oil until golden brown.

2. Drain and set aside. In the same oil, add the onions and capsicum. When the onions start to turn pink, add the ginger-garlic paste. Stir until fragrant.

3. Turn the heat to high. Add the soya, chilli and tomato sauce. Mix well and reduce heat. Add the fried fish pieces. Again mix well and cook on low heat.

4. Mix well the 1 teaspoon cornflour in 4 tablespoons water. Add to the fish mixture and cook until the sauce thickens and coats the fish completely. Add chopped spring onions and honey. Serve hot with your fav drink.
