Pumpkin and Bean Stew for Halloween

Here comes the “Pumpkin Festival”. We all are excited for Halloween festival. Isn’t it? Let’s start the preparation with a healthy kick. Whether you are throwing a fancy party to your friends or kids, a healthy recipe is always welcomed. Pinto beans serve as a great source of proteins. Infact, it is a good substitute for meat. Pumpkin is almost fat free and low in calories. It contains carotenoids that generate vitamin A. They are also rich in vitamins C, E and B complex.

Pumpkins contain calcium and fibre. But the advantage is that they are free from fat which is otherwise present in red meat. They are great for sodium-free diet. These beans are rich in vitamin B, thiamin, roboflavin and niacin. Apart from this, they are rich in fibre which is very helpful in controlling blood sugar levels. Pinto beans are used in meal courses such as bakes, appetizers, salads and even bread. I will be preparing Healthy Pumpkin and Bean Stew with Herbs.

Healthy Pumpkin and Bean Stew with Herbs


2 cups water,

1 sliced Onion,

2 teaspoons Salt,

2 Mexican Chillies,

4 chopped Tomatoes,

15 ounce Pinto Beans,

2 tablespoons Olive oil,

2 teaspoons ground Cumin

1 tablespoon minced Ginger,

5 cups cubed peeled Pumpkin,

2 tablespoons grated Parmesan Cheese/Vegan Cream Cheese (Optional).

Preparation Method:-

1. Preheat the broiler. Place Mexican chillies on a foil-lined baking sheet. Broil until blackened for 8 minutes, turning them with a tong. Steam the chillies, discarding stem and seeds.

2. Heat oil in a Dutch oven over medium heat. Add cumin, onion, ginger and Mexican chillies. Cook for 4 minutes. Add tomatoes and cook, stirring often, until the tomatoes are soft for 5 minutes.

3. Add water and pumpkin. Bring to a boil. Cover and simmer until the pumpkin is tender, about 30 minutes. Stir in par-boiled beans and cook until heated through. Stir in Parmesan/Vegan Cream Cheese and salt.

4. Serve hot with steamed rice or garlic bread!

Celebrate Labor Day with American-style Fried Chicken and Beer Dip

Summer in America ends-up with the Labor Day. This certainly calls for a family picnic. The occasion is accompanied by coleslaws, corny dogs, salads, baked beans, lemonade and of course the authentic mouth-watering fried chicken. The thought is making me hungry. Yummzz! Hope you enjoyed my barbecue recipes for picnic. I will love to pair up this fried chicken with my favorite cheese dip and french fries. What would you pair it with? My mom always prepares aromatic fried rice, which serves as an equally great combo with any kinda chicken. So here I bring you with my favorite fried chicken recipe and Cheesy Beer Dip.

Authentic Fried Chicken


1 teaspoon salt,

2 cups buttermilk,

2 cups all-purpose flour,

1 tablespoon garlic powder,

1 tablespoon onion powder,

1 tablespoon Dijon mustard,

1 teaspoon cayenne pepper,

1 tablespoon baking powder,

5 cups vegetable oil for frying,

1 whole chicken, cut into pieces,

1 teaspoon ground black pepper.

Preparation Method:-

1. Whisk together buttermilk, salt, mustard, pepper and cayenne in a large bowl. Pour it into a plastic bag. Add the chicken pieces and coat with the marinade, squeeze out excess air. Seal the bag. Marinate in the refrigerator for 8 hours.

2. Before frying the chicken, combine the flour, garlic powder, baking powder and onion powder in the other plastic bag. Mix thoroughly.

3. Add one marinated chicken piece at a time into the dry ingredients mixture  bag. Coat the dry mixture completely. Complete this process with all the pieces.

4. Now heat oil in a large frying pan over medium-high heat. When oil is hot, fry chicken in batches until golden brown on both sides, till the chicken is completely cooked.

5. You can serve the dish with various options like French fries, fried rice etc. I prefer having this with my favorite Cheesy Beer Dip.

I like having this chicken with tomato chili sauce, but if time permits, I surely go for this dip. If you really wanna have a relaxing holiday on the soothing summer evening, enjoy this cheesy beer dip. Though you can pair this dip with chips, nachos, french fries and other veggies, I’d like pairing it up with my fav fried chicken.


1/4 cup beer,

1/2 cup chunky salsa,

½ teaspoon garlic powder,

2 cups shredded American cheese blend.

Preparation Method:-

1. In a small saucepan, combine all ingredients over medium heat. Cook for 5 minutes, or until smooth and the cheese is melted. Stir frequently.

2. Serve immediately!

Special July 4th Recipes – Happy Independence Day

Fourth of July represents birth of the United States of America as an altogether independent nation. As this auspicious day is falling on Friday, I am definitely gonna have a great weekend. My sister, her husband along with two lovely kids are gonna pay a visit to my place. The grand day must be welcomed by grand meal. I have already decided the menu. Hence, I will be selecting, quick and easy meal plus the meal that can be pre-prepared since I will like to share nuggets of my life with my sweet sister. They will be landing by brunch time. Just have a look at the goodies, I have decided for them. I will be celebrating Fourth of July with traditional/patriotic meal.

Double Beef Cheese Burger – I will be preparing traditional American Double Beef Cheese Burger. This will consist of two spicy beef patties, with rich American cheese slices plus creamy burger spread. I prefer making this at home.

The Patriotic Spread/Dip Recipe:-


1 Cup Mayonnaise,

2 Tablespoons sweet relish,

2 Teaspoons prepared mustard,

1/2 Teaspoons white sugar.

Preparation Method:-

Mix the ingredients thoroughly till the sugar is dissolved completely.

You can prepare the spread in advance to have a good chit-chat time with your pals. I’m doing the same, since I have a lot many things to share with my family. Infact the beef patties can be prepared a night before, we just need to warm it up. What a quick and easy recipe! Beef is my family’s all time favorite.

Seven Layer Salad –  This classic potluck salad is a quick and easy recipe, stuffed with layers of veggies, cheese and bacon. You just need placing the greens in glass bowl. Then top it with layers of celery, peppers, onions, bacon and peas at the end. Then spread mayo over the peas. This completely covers the top of salad. Lastly, sprinkle with cheese. Refrigerate for 12 hours for flavors to blend completely. This recipe can be prepared in advance.

Apple Pie Pops –How can I forget the sweet children, Jane and Peter! Kids are very fond of Apple Pie Pops, what a delightful thought. Well hope you liked my recipe, Crunchy Apple Pie. I had prepared it during Christmas and everybody just loved it. Hope these Apple Pie Pops will be equally magical. I will be gifting kids a box full of this amazing sweets.
